INGREDIENTS (4 servings) • 900g chicken drumsticks. • 3 pieces of dried bay leaves. • 8 tbsp soy sauce. • 4 tbsp coconut vinegar. • 5 cloves garlic. • 3 dl water. • 3 tbsp cooking oil. • 1 tsp sugar. • ¼ tsp salt . • 1 tsp whole peppercorn. • 10g ginger. • 1 chili. • 1 garlic glove. • 2 cups kale. • ½ cup chives.
INSTRUCTIONS 1. In a bowl mix together the coconut vinegar, soy sauce, sugar, peppercorns, crushed garlic cloves and bay leaves. 2. Cut the chicken drumsticks in serving pieces and place it in a mixing bowl. 3. Pour the marinade over the chicken, and let it cool in the fridge for at least 30 min. (If you can marinate overnight, even better). 4. Heat oil in a large sauté pan over medium-high heat, add the marinated chicken and cook until lightly browned, about 2 minutes on each side. 5. Pour-in the remaining marinade and add water. Cover the pan and let it simmer for about 25 min. until the chicken is tender and cooked through. 6. Chop ginger, chili, garlic, and kale, and stir fry it together on a new pan with 1 tbsp of oil for 1 min. 7. Serve your chicken adobo over the greens, and garnish with chives. If desired, serve with hot rice on the side.
